Ingredients
For the Bessara Dip or Soup:
- 12 oz. dried split fava beans (≈ 2.25 cups)
- ⅓ cup olive oil
- 6–7 garlic cloves, crushed
- 6.5 cups water
- 2 tsp paprika
- 2 tsp ground cumin
- 1.5 tsp salt (or to taste)
- 1–2 tbsp lemon juice (optional, to taste)
Condiments:
- Extra virgin olive oil
- Ground cumin
- Cayenne pepper
- Harissa
- Salt
Step-by-Step Instructions
1. Soak the Beans
Place the dried split fava beans in a bowl and cover with cold water.
Leave to soak for at least 8 hours or overnight.

2. Prepare the Soup
Drain the soaked beans and remove any stray skins.
Place the beans in a pot with water, olive oil, garlic, paprika, cumin, and salt.
Bring to a boil, then reduce heat and simmer partially covered for about 1 hour, until beans are tender.
3. Puree the Beans
Drain the beans, reserving the cooking liquid.
Puree the beans in a blender, immersion blender, or food processor.
Add reserved broth gradually to reach the desired smoothness or thickness.
Stir in lemon juice if using, and adjust salt to taste.
4. Serve & Garnish
Reheat the Bissara gently over medium-low heat.
Serve in bowls or a communal plate, depending on desired thickness.
Top with olive oil, cumin, cayenne, or harissa as condiments.
Accompany with crusty Moroccan bread or use as a dip.
