Ingredients

  • 1 whole chicken, cut into pieces (about 3–4 lbs)
  • 2 preserved lemons, rinsed and quartered
  • 1 cup green olives, pitted
  • 2 medium onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp turmeric or saffron threads, soaked in 2 tbsp warm water
  • 1/2 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1/4 cup olive oil
  • 1 cup water
  • Fresh cilantro and parsley, chopped, for garnish

Step-by-Step Instructions

1. Marinate the Chicken

In a large bowl, combine chicken pieces with onions, garlic, ginger, cinnamon, turmeric, salt, and pepper.
Add olive oil and mix well to coat the chicken evenly.
Let it marinate for at least 1 hour, or overnight in the refrigerator for deeper flavor.

2. Brown the Chicken

Heat a tagine or large heavy-bottomed pot over medium heat.
Brown the chicken pieces on all sides for 5–7 minutes.
Remove and set aside.

3. Cook the Tagine

Add the marinated onions and garlic to the pot and sauté until softened.
Return the chicken to the pot, add water, and cover.
Simmer on low heat for 40–50 minutes until the chicken is cooked through and tender.

4. Add Preserved Lemons & Olives

Add quartered preserved lemons and green olives to the tagine.
Cook for an additional 10–15 minutes, allowing the flavors to meld.

5. Serve & Garnish

Transfer the tagine to a serving dish and sprinkle with fresh parsley and cilantro.
Serve with couscous, steamed rice, or Moroccan flatbread.
